Southwestern Cheesy Muffin Tin Meatballs

12, 2-ounce meatballs, one carb and 158 calories per meatball.

Ingredients:

1.5 lbs (24 ounces) ground beef or chuck
1.5 cups ounces of shredded sharp cheddar cheese
1 tblsp Dark Chili powder
1 teaspoon Cumin
½ teaspoon Garlic
½ teaspoon Red pepper flakes

1. Mix all ingredients in bowl—mix well
2. Divide mixture in half.
3. Shape half of the mixture into 2 individual balls approx. 2 ounces each
4. Place in greased muffin tin
5. Repeat process for second half of mixture.
6. Bake in oven at 350 degrees for 20 minutes. If not done, bake additional 5 minutes.
